Yes, you heard me right! Here it is, a
recipe showing you how you CAN have
bread-like products without worrying.
I've been experimenting on creating pitas
and eventually bread, but for now, enjoy
this:
Hypoglycemic Pizza
(Makes 12 Large Slices)
2 cups almond meal/flour
2 cups ground golden flax meal/flour
1 cup water
2 tablespoons olive oil
1 container Cucina Antica Organic Pizza
Sauce (see below)
2 packages organic mozarella cheese
Directions:
Mix flour, water and olive oil in a bowl.
Knead well and place onto baking pan (a
typical cookie pan, roughly the size of a
regular, rectangular pizza). Flatten out
to all edges using a roller (might want to
add some flax meal to it so it doesn't
stick, otherwise it will be a bit messy).
Heat crust in oven for approximately 10-12
minutes at 425 degrees (preheat oven first
for best results). Take out crust and add
container of sauce. Note: I get this
sauce from Whole Foods, but if you can't
find it, just look at a normal pizza sauce
container and either make it yourself
using the ingredients by taking out what
you can't have (usually just sugar is the
only problem), or finding one that doesn't
have what you need to avoid. Put the
sauce on the pizza, and then add the two
packages of cheese, spreading evenly. Put
back into oven at 425 degrees and cook for
an additional 10-12 minutes. Take out and
eat! You'll be amazed!
