Could this be related to stress and anxiety? I have been going through it pretty bad the last few months, I have seen other posts saying they get rashes, but my hands have been consistently red for the last 1 or 2 weeks, they also feel pretty rough when you touch them My leg also feels kind of numb, but that could just be my paranoia, the red hand thing is definetly something I am not paranoid about

Well, it could be. However, I would never let symptoms like numbness/redness go without getting it checked out- could be a circulation/nervous system thing.
