Technically, it's possible.
There are eight genetic "letters" involved
in skin color, and if all the genes are
present in the two parents (but dormant
due to dominant/recessive genes), the baby
could have whatever skin color you can
rack up in all the combinations of all
these factors. Eye color also has more
than one "letter," though I'm not sure how
many.
