Easy Recipes For Busy Moms!

Broccoli and cheese casserole:
2 chicken breasts
3 heads of brocoli
1 can of cream and broccoli soup
1/3 cup of milk
Shredded cheddar cheese ( desired amount
)
Spray a casserole dish with pam.Cube the
chicken breasts and cook them. ( I cook
them in a frying pan and season it with
seasoning salt ) While the chicken is
cooking cut brocolli into little pieces .
(steam brocolii is desired, it's good both
ways)
Add the cooked chicken and brocolli to the
casserole dish. In seperate bowl wisk
together the can of soup and milk til
barley any lumps.
Spread evenly the soup and milk mixture to
the casserole dish.
Add desired amount of shredded chedar
cheese ontop and bake at 425 for approx.
20 min! Very yummy and easy! enjoy!

that sounds really good! i love new
recipes!
we had cheeseburger casserole tonight.
brown 1lb ground turkey.
mix in 1 can golden mushroom soup and 1
can cheddar cheese soup.
pour mixture into 9x13 sprayed baking
dish.
arrange crinkle cut fries on top in a
single layer.
bake at 350* for 50-55 minutes until fries
are golden brown. i also mix in a jar of
mushrooms.

edit: i usually cut this recipe in
half because the leftovers are too high in
points for lunches. cut in half, this
makes 2 huge servings at 9 points. oh, and
i use a 9x9 pan.
another thing we eat weekly is salsa
chicken.

edit: 1 cup = 5 points
1 lb chicken breasts (frozen)
1 can black beans
1 can corn
16oz salsa
place frozen chicken breasts in bottom of
crock pot. dump corn, beans and salsa on
top. cook on high for 3 hours. shred
chicken and mix everything together. it's
good by itself or in wraps with sour cream
and cheese.

Those look yummy guys! Here's one of my
favorites
Fiesta Chicken
2 Cans Cream of chkn soup
1 Can Cheddar Soup
1 Can Rotell Tomatoes
Crunched up Doritos
Shredded Cheddar Cheese
Mix it all together and add some more
chips and shredded cheese to the top. Cook
at 350 until bubbly.
This takes me about 10 minutes to make. My
Dh loves it too!

Well I am not new mom and not even
Expecting yet but I have a few to share.
Quick Swedish Meatballs
1 package of prepackaged precooked
Meatballs (Turkey/beef/whatever)
1 PAckage of Beef Stroganoff Sauce Mix (
The dry pakets )
fat free or light Sour CReam
Extra Wide Egg Noodles ( I prefer the
Heathy Harvest whole wheat cheap to only
about 1.00each package)
step one:
-Boil the Egg Noodles
Step 2:<-- do while step one is being
cooked
-Follow Directions on the back of the
stroganoff package but omit the meat
steps
step 3:
-Put meatballs in the Microwave until
heated through ( best to defrost in the
freezer overnight)
step 4:
Put meatballs into a bowl and pour the
sauce over them
Serve over the noodles and viola YUM YUM!
* You can use more sour cream if you like
creamier sauces
* This usually takes me about 15-20
minutes to whip up and I always get rave
reviews

Cheezy .Spaghetti .Bake
1/2 lb lean ground beef
1/4 cup chopped onion
15 ounces of spag. sauce
Cook beef with onion add spag sauce
1 1/2 cup spaghetti broken into quarters
Cook spaghetti however you like it
Mix sauce mix into cooked spaghetti
2 .Tbsp flour
1/4 tsp salt
3/4 cup evaporated milk
1/3 cup water
1/2 cup shredded american (monery jack is
great too, or a combination of your
favorite cheeses)
2 Tbsp grated parmesan cheese
Melt butter in a sauce pan, add flour,
salt, evap. milk and water. Heat until
slightly thickened. Stir constantly. Add
above cheeses and stir until melted and
smooth.
Add 1/2 spaghetti mixture in the bottom of
a 10X6X2 pan, top with melted cheese
mixture, add remaining spaghetti mixture
and top with
1/2 cup shredded cheese (whatever kind you
like). Bake for 20-30 minutes @350 or
when the cheese on top has melted.

the best meatballs you'll ever
have
1 1/4 lb ground beef
2 eggs
a little over 3/4 but less than 1 cup of
plain breadcrumbs
1/4 c grated parmesan (the sprinkle kind
in the can)
1 1/2 T ketchup
salt and pepper
mix everything together and roll into
balls, you should get about 13. microwave
for 6 minutes, turning plate every 2
minutes. add to sauce and simmer for about
1/2 hour stirring occasionally.

edit: this is not very points
friendly so we don't have them often. i
call one meatball 3 points.

meatloaf muffins! these are *wicked* easy
and so good!
1 lb ground beef
1 package stove top stuffing
1 cup water
2 egg whites
mix everything together. spray muffin tin
and fill cups with mixture, smush it down.
bake at 350* for 25 minutes.
ww
edit: 1 muffin = 2 points. i serve
them with mashed potatoes and gravy and
green beans. these make great lunch
leftovers!
everything i've posted except the
meatballs are all weight watchers
friendly.

we seem to get posts about recipes often
enough so I
will sticky this one and we can add to it
when we want.
Quick and easy
#1. 2-3 chicken breasts
egg noodles
shredded carrots
italian salad dressing
cut up chicken into bite sized pieces,
cook the chicken using some of the italian
dressing as your "oil" in the pan
cook the egg noodles
mix all together and add more dressing.
sometimes I add cheese on top and bake it
for 5-10 minutes at 350 (If I have extra
time)
I have an awesome chicken lasgana recipe
Mike and I made up. It's more work but if
anyone wants me to post it I will.
everyone asks me to make it constantly.

one of my favorites that i used to hate
when my mom made it but now i love it is
shepards pie
you will need:
1lb ground beef
one pack of brown gravy
1-2 cans mixed veggies
mashed potatoes (can use real potatoes or
instant)
grated cheese
preheat oven to 350.
brown the ground beef and drain the fat.
add gravy mix and one cup water. gravy
should thicken alittle. drain the canned
veggies and mix in with the ground beef.
put the ground beef and veggie mix into an
8x8 cake pan cover with mashed potatoes
and sprinkle grated cheese over the mashed
potatoes back in the oven for 30 min or
until cheese is melted and starts turning
golden brown

you can adjust this to make as much as you
want and to your personal preference
2 boneless and skinless chicken breasts
1 10 oz bag fresh spinach
2 portabella mushrooms
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste
4 flour tortillas
desired amount of shredded mexican cheese
blend
ok this is pretty simple, just cut the
chicken into bite size strips and cook
them (I like to cook them with butter).
You can add salt if you don't like bland
chicken. When you are done, set this
aside.
sautee the mushrooms first. Portabella
mushrooms are a little pricy, but the
regular kind won't work, they tend to be
more juicy than portabella shrooms and
make the filling drippy. When the
mushrooms are almost done, add the bag of
spinach and sautee this as well. At this
point add the garlic and onion powder. I
like to add pepper as well.
now toss in the chicken and lower the heat
or set aside.
spray a 2 cookie sheets with pam or it's
equivalent, and place 2 flour tortillas
per sheet. sprinkle the desired amount of
cheese on the tortillas and bake for about
5-6 minute in an oven preheated to 350
degrees farenheit.
Now spoon the desired amount of chicken
spinach and mushroom onto the tortillas
and fold them for a yummy quesadilla!!!
*optional: you can lightly fry the
quesadilla by putting them in a pan with
vegetable oil, if you prefer crispy
quesadillas.

ok this might sound ghetto but its good.
take like, two packages of hotdogs
(depending on how many ppl ur feeding.. we
have a large house) and cut them all in
half. Get those buscuits that come in the
little blue rolls (the ones that when you
bake them up they are like, maybe an inch
and a half wide and come in like counts of
10) and roll one buscuit around each of
the hotdogs. Bake at 350 for about 8-10
minutes.

Spicy African Chicken
4 Boneless Skinless Chicken Breasts,
Cubed
1clove garlic
1 med onion chopped
Fry in pan until chicken is cooked.
Add:
1 Can diced tomatoes
1/4 cup peanut butter.. yeah I know.. but
its delicious
dash of red pepper flakes
1/2 tsp chilli powder
Let this simmer for about 30 Min, then
serve over rice.
Sooooo good.
Another easy one:
Chicken Breasts (boneless)
Bottle of Pasta Sauce
Grated Mozza Cheese
put chicken in baking dish, cover with
Mozza, then cover with Sauce. Bake @ 375 F
for approx an hour.. sometimes it takes
longer, just check to ensure chicken is
cooked thru.
Serve over Pasta of your choice.

Hamburger Gravy and Rice
need:
1lb hamburger / Turkey Burger
1 package of brown gravy mix / turkey
ggravy
2 cups of rice jasmine / Brown
To make:
Brown Hamburger and drain grease
Pour specified amount of water that tjhe
gravy mix calls for into the hamburger
skillet ( hamburger still inthe pan) Add
gravy powder and wisk until to desired
thickness.
Make rice 2 cups of rice to 4 cups of
water
Serve hamburger gravy on top of rice and
enjoy ( add salt and pepper to taste.

Sake Salmon
Need:
desired amount of salmon fillets/steaks
bottle of sake ( cheaper the better lol )
Fresh or dried Dill
1 yellow or purple onion
salt
pepper
garlic
Aluminum Foil
to make:
set oven to preheat at 350
Line a baking dish with foil
place salmon into dish
chop up onions into stips and place into
salmon pan
spirinkle herbs on top /
salt/pepper/garlic/dill
Pour a little sake on top ( you want a
1/16th inch pool on the bottom of the
pan.
Cover top of pan with more Foil and pop
into the over until flakes easily with
fork.
* Good with Rice and Vegies ( Brown Rice
Is always yummy )
