stuffed mushrooms are sooo yummy but i
make them differently off a recipe on my
betty crocker book, dont use spinach or
sausage, but we use breadcrumbs , cheese ,
green onion and fresh garlic and they are
super yummy,
Chicken quesadillas
Tortillas
1 or 2 cans of the tyson chicken , its in
the tuna aisle in a red can
1 pack of hot taco seasoning
1 can enchilada sauce(the red sauce)
1 bag of mexican cheese shredded cheese
jalepenos (optional)
use an 8x8 pan, preheat oven to 400
degrees F, cover bottom of pan with
tortillas , fold up on the sides, in a
seperate bowl mix the chicken so it
crumbles apart witht he taco seasoning,
then place on top of tortillas, pour 1/4
or 1/2 of the can of enchilada sauce over
top of the chicken. sprinle some cheese
over top of that, cover with tortillas
over top, sprinkle more cheese and
enchilda sauce over top of the tortillas,
and some mroe cheese if you want, can
place jalepenos on top of it. Bake in the
oven until the cheese has melted, yummy
mexican meal

Smash up a cup of French Fried Onions (the
kind you use to make Green bean
casserole)
Beat an egg
Wet a chicken breast in the egg and coat
with the onions and bake until done.
It looked great.
That sounds really good. I love chicken.
I'm not a big fan of red meat (tho I eat
more now than I ever have......maybe
that's why my iron has been good!) But
chicken is my favorite kind of meat. Have
you tried the recipe

my friend did that recipe but she also put

Do The Chunky Chicken
If my boyfriend will eat anyone will.. its
so good! haha
Ingredients:
* Dressing
o 3/4 cup (175 mL)
lemon-flavoured yogurt (see tip below)
o 1/4 cup (50 mL) light
mayonnaise
o 3 tbsp (45 mL) white vinegar
o 2 tbsp (30 mL) minced fresh
dill
o 1 tbsp (15 mL) Dijon mustard
o 1/2 tsp (2 mL) salt
o 1/4 tsp (1 mL) freshly ground
black pepper
* Salad
o 4 cups (1000 mL) chopped
cooked chicken breast
o 1 1/2 cups (375 mL) diced
celery
o 1 cup (250 mL) chopped red
bell pepper
o 1/2 cup (125 mL) chopped green
onions (with white parts)
o 1/2 cup (125 mL) sliced
almonds, toasted (optional)
o 1/2 cup (125 mL) frozen green
peas, thawed
o 1/3 cup (75 mL) chopped fresh
parsley
o 4 hard-boiled eggs, sliced
Directions:
To make dressing, whisk together all
dressing ingredients in a medium bowl.
Cover and refrigerate until ready to use.
Combine all salad ingredients in a large
bowl. Mix well. Add dressing and toss
gently. Cover and refrigerate for at least
1 hour before serving.
Tip: if you can't find lemon yogurt, use
plain yogurt (not vanilla!) in its place,
and add 1 tbsp (15 mL) lemon juice plus 1
tbsp (15 mL) granulated sugar to the
dressing
Try the Chunky Chicken Salad as a wrap or
stuffed pita (with whole wheat tortilla or
1/2 whole wheat pocket pita) that is
easygrab andgo.
o 2 tsp. canola oil
o 1 tsp. fresh lime juice
o 4 (4-oz) boneless skinless
chicken breasts
* Watermelon Salsa
o 2 cups diced watermelon
o 1/2 cup diced yellow bell
pepper
o 3 Tbsp. chopped fresh
cilantro
o 2 Tbsp. fresh lime juice
o 1 Tbsp. diced red onion
Directions:
To prepare chicken, in cup or small bowl
combine oil and lime juice; brush chicken
breasts with oil mixture. Grill or broil
until cooked through and juices run
clear.
Meanwhile, in medium bowl combine salsa
ingredients, mixing well.
Place 1 cooked chicken breast on each of 4
plates; top each with 1/4 of the salsa.
POINTS value per serving: 4, 190 calories,
5.5g fat, 0.7g fiber; Core Plan(r) recipe.

Tuna Pasta
Mix together two cans of tuna with your
desired amount of mayo. cook pasta (i
usually use spirals or shells) and mix
together. the kids I sit for love it as
does my whole family. it takes roughly 10
minutes to make and is great cold or hot.

I've cut everything in half for this
recipe and it should serve 3-4 people I
usually keep it doubled for my family
because we eat the leftovers the next
morning if there is any.
1 Pack of sausage (not the pattys and not
the little log ones.)
1 pack of bisquick (indvidaul pack)
2 cups of cheese.
*preheat oven to 350*
fry up the sausage until it's done
Pour the bisquick, 2 cups of cheese and
sausage all together in a bowl *keep some
grease to mix in it.* mix it all together
weather with fork/spoon or with your
hands.
Make into balls on a cookie sheet and bake
at 350 for 15-25 minutes *some may take
longer may take less depending on the
oven*
Serve usually 2-3 a piece fills us up and
then we save the rest until the next a.m.
and grab as we're runnin out the door. I
usually do not like giving soft drinks to
my family with our meals but add a coke to
it and it's a treat all together so when
we do have them it is a treat to have the
soft drinks.

Italian Chicken
We use a pound of the boneless skinless
chicken breast but I guess you could use
any kind of chicken with it..
I recommend the Robusto Italian dressing
for this as well.
Marinate the chicken in the italian
dressing all day or however long you like,
put it in a 8x8 baking dish, pop it in the
oven for an hour or until chicken is
done.
Slice potatoes place in a 9x13 dish season
with salt and pepper , use the monterey
steak seasoning and mix in the potatoes
and onoin and garlic powder also. once all
mixed place 4 tbsp butter evenly over top
cook at 425 for 20-30 min before done
sprinkle cheese on top to melt in , voila
and yummy
also my german friend made something once
it wasnt too bad
u sautee some ham u can use lunchmeat ham
and onions in a skillet, cook pasta any
type, drain pasta mix in ham and onions
and top with desired amount of ketchup!

chili
1 lb ground turkey (or beef)
1/2 onion, chopped (or a whole, i hate
onions so i don't know what people like)
30 oz red kidney beans
28 oz crushed tomatoes
2 garlic cloves, crushed
1 T red wine vinegar
2 T chili powder
8 oz tomato sauce
we like ours pretty spicy, so i also add 1
T crushed red pepper flakes and about 1/2
T cumin.
brown ground beef, add onions and garlic
and cook until onion is soft.
in a blender, combine tomato sauce,
vinegar, chili powder (and red pepper
flakes and cumin if you want to add
those).
drain and rinse beans, add to beef. add
crushed tomatoes and blender mixture. stir
well and bring to a boil, reduce heat and
simmer covered for 30 minutes.

I have no idea if this actually has a
technical name or not but we just call it
tuna fish & noodles! It's really
good..
Tuna Fish & Noodles!
1 bag of egg noodles
1 can of cream of chicken soup
1 can of evaporated milk
1 can of tunafish (We use the pretty big
cans, not sure what size they are exactly,
Shane just likes extra tunafish in his)
In a pan boil water, put egg noodles in
until done
Drain water
Put the noodles back in the pan & add
the can of soup, milk & tunafish.
Stir it all up, let it heat up then
serve!
Very easy & very yummy!!

i'm too lazy to go back and check, so...
crock pot cheesy
chicken
1 lb chicken, cut into cubes
1 can cream of chicken soup
1/2 can cheddar soup
garlic powder to taste
put cubed chicken in crock pot, sprinkle
with garlic powder, pour soups over
chicken. cook on high for 3-4 hours, serve
over noodles or rice.
i like to add a bag of frozen peas about
20 minutes before it's done.

this one is *so* quick and easy!
broiled parmesan
tilapia
1 lb tilapia
2 T butter
1 1/2 T mayonnaise
1 T lemon juice
1/4 C grated parmesan
1/8 t black pepper
mix everything but the fish together.
preheat broiler. line baking sheet with
foil, place tilapia filets on top. Broil
2-3 inches from flame for 3 minutes, flip
over and broil an additional 2 minutes.
spoon topping over each filet, broil
another 2 minutes until topping is
browned.
this was seriously so good. it tasted like
something i would order in a restaurant.
it also takes less than 10 minutes from
prep to finish!

crock pot pork chops and
stuffing
1 lb pork chops (not the thin cut)
1 box stove top stuffing
1 can cream of mushroom soup
1 c water
mix stuffing mix (dry from box), soup, and
water. spray crock pot and place pork
chops in bottom, cover with stuffing
mixture. cook on low 6-8 hours or high for
3-4.
soooo good, but tricky because it's easy
to overcook pork in the crock pot.

Chicken Meatloaf
1lb of Ground Chicken
6 oz of tomato sauce (I uses spaghetti
sauce)
1/2 C grated cheese
1 C bread crumbs (eyeball this on the
consistency of the loaf)
2 eggs
1/4 C cut onion
1 small can mushrooms
1 tsp garlic salt
salt and pepper to taste
Saute mushrooms and onions till a little
less than fully cooked. Mix a little
sauce in if you want. Mix bread crumbs,
chicken, sauce, seasonings, onions and
mushrooms and cheese. Place in loaf pan
(I out mine in a loaf shape in an 8 X 8
glass pan). Cook at 350 degrees until
done (about an hour for me but can vary
depending on moisture etc)
i don't have exact
measurements because i usually just throw
it together, but...
baked chicken and ziti
chicken, cooked and cubed (i like a lot so
i usually use around 2 pounds)
1 box ziti, cooked and drained (but i use
rigatoni)
28 oz can crushed tomatoes (but you might
want to add another 1/2 can)
lowfat ricotta (again, i like a lot so i
think i usually use the 24 oz container)
shredded mozzarella
i like this as is but you'd probably want
to add garlic to the chicken and sauteed
onions to the tomatoes, maybe some oregano
to the tomatoes too. sometimes i'll add
spinach to the ricotta or mushrooms to the
tomatoes.
in a 9x13 baking dish, pour 1/3 tomatoes
in bottom, mix ricotta with pasta and pour
into dish, spread chicken evenly over the
top, top with rest of tomatoes, sprinkle
mozzarella evenly over top. bake at 375*
for 20 minutes until cheese is melted and
bubbly.
this makes a massive
amount.
i made this one with friends over, we
added mushrooms and black olives and
jalepenos in it and stff, and it does make
alot! but it was realy realy good

4 boneless pork chops
1 1/2 Cups Chunky Salsa
1 Cup Mushrooms
1 Cup Cheddar Cheese
2 Tablespoons Maple Syrup
2 Tablespoons of Parsley or 1/2 Cup of
chopped fresh parsley
Heat oven to 375 degress. Spoon Salsa into
a rectangular baking dish. Put chops on
top.
Combine, Cheese, Mushrooms, Maple Syrup
and Parlsey in a medium bowl, stir
together and than spoon on top of chops.
Bake for 25-30 Mins (longer if you use
thick chops) (less if you use thin)
Serve chops with salsa from pan. I serve
mexican rice with this and my hubby LOVES
it, and it is SOOOO EASY!!!!!

My spinach non-pie!
-bag of spinache
-bag of pepeeroni
-can of finely cut olives
-your favorite cheese (I use provalone or
mozzarella)
-loaf of Bread
-sandwich maker(i'm sure you could grill
it also but i've never tried)
Put all spinach in a pot in stove and cook
well.
Cut up pepperoni into pieces.
pour olives, pepperoni and cheese into the
spinache and stir.
use a spoon to add mixture to a piece of
bread (not too much or it will spill out
when you put it in the sandwich maker.
Place it in the sandwhich maker and close
it. Leave it in for about 2-3 minutes or
until light brown/golden.
