That's a good idea! Bridget, I was going to ask if you could .P.M me the same list of meals and treats you were going to send .Terra.

I don't exactly diet, but .I find that .I lose more weight when .I graze throughout the day, eating frequent small meals. Also, I try to drink only water, skim milk, and occasionally juice.

you can make almost anything ww friendly by substituting light and fat free things for full fat.

for instance, i use i can't believe it's not butter light instead of butter. i haven't had real butter in so long that i don't even notice a difference, i think it's really good.

also, i'll use ground turkey instead of ground beef in most things.

hmm... what else... for italian meals, use light cheeses.

i try to stay away from fat free dairy products because i think they're nasty. i'll use fat free shredded cheddar, but that's about it.

i have some good recipes that i can post later. some of them are already posted in the recipes sticky in the baby talk forum.

rach, i'm lazy and never pmed terra. i did post a list of snacks in her thread though (i think it was the "whoo whoo" thread?). i don't make a lot of recipes, mostly we have stuff like shake n bake chicken, turkey burgers, steak, tacos... i do have some good recipes that i love and are very easy though. i'll try to post some later!

This is an old ww classic.

Boneless skinless chicken breasts.
1 can diet coke
1 cup ketchup

Stir coke and ketchup in skillet, add chicken, cover and simmer about 45 minutes until chicken is done, ladeling sauce over chicken periodically. Take the lid off towards end if sauce isnt as thick as you like it. Serve with veggies or over rice. Tastes just like bbq without the fat.

I dont know the points, sorry. It is virtually fat free, and low cal/carb.

i've seen the diet coke recipe many times on the ww forums but it's never appealed to me. i don't know why, i like diet coke and i like chicken! does it really taste like bbq? i make shredded bbq chicken and i just use real bbq sauce, i think it's like 1 point for 2 tablespoons which is plenty for one serving.

this was dinner tonight (wicked easy and i'm so proud of myself when i make someting completely from scratch)-

shrimp scampi over angel hair
4 servings, 6 points each

1 .t olive oil
1 medium onion, diced (i hate onions so i skip this)
3 garlic cloves, minced
14 oz chicken broth, divided (fat free, low sodium)
3 .t flour
1 lb shrimp
1 .t lemon juice
2 .t butter (i can't believe it's not butter light)
8 oz uncooked wheat angel hair (add 1 point if you use regular, but wheat tastes the same!)

make the sauce while the pasta cooks.

1. in a large saucepan, heat oil over medium heat. add onion, cover, and cook until soft, about 6 minutes. add garlic and cook 1 more minute. (like i said, i skip the onion and save myself 6 minutes)

2. pour 1 cup of broth and the flour into a container with a tight lid and shake to blend. pour remaining broth and broth/flour mixture into saucepan, bring to a boil, whisking constantly. reduce heat and simmer 5 minutes, add shrimp and cook 3 more minutes. stir in lemon juice and butter.

3. pour over cooked pasta and enjoy! add a pinch of red pepper flakes if you want, it's like a spicy punch in the mouth!

i save myself time and clean up and use the minced garlic that comes in a jar and the lemon juice that comes in the little plastic lemon.

here's another awesome one! when i make this i eat it all week for breakfast.

spicy black bean soup
1 cup = 3 points

3 cans black beans
1 medium onion, finely chopped (i skip this because onions are nasty)
4 cloves minced garlic
1/2 tsp red pepper flakes (but i like it *really* spicy and use 2 tsp)
1 tsp cumin
14 oz ff chicken broth
10 oz rotel tomatoes
1 can corn, drained

1. Coat bottom of a large stockpot with cooking spray. Add onion and garlic and cook, stirring frequently, until onions are soft but not brown, about 5 minutes. (skip this if you don't use onion and just add the garlic during step 2)

2. Place one can of beans in blender; add sautéed onion mixture, red pepper flakes and cumin. Cover and blend on high until smooth, about 30 seconds. Pour mixture back into stockpot.

3. Place second can of beans and broth in blender and puree until smooth; add to stockpot.

4. Stir third can of beans (do not puree first), rotel tomatoes, and corn into stockpot. Bring to a boil, lower heat to medium and simmer for 20 to 25 minutes.

we add a sprinkle of fat free shredded cheddar and use baked tostitos (2 points per ounce) to scoop it up.
